4 tbsp melted odourless coconut oil

1 onion, chopped

200gr spinach, chopped

50gr kale, choppedif you can find it, not absolutely necessary, you can use some more spinach instead

1 zucchini, diced

1 fresh onion, chopped

50gr peasfresh or frozen

juice from 1 lemon

100gr basmati rice

2 handfulls raw almondsor other nuts
I generally find rice kind of dull… It certainly is not one of my favorite foods. I feel it nees “company” to be tasty. This particular recipe, I ought to my beloved yoga teacher, Elena. She had us over for dinner once, and there I tried this sooo tasty and simple, yet unique combination of greens and almonds. When I asked her how she made it, I realized it’s a dish that can be an everyday meal at home but also be served as a sidedish at a formal dinner.
You can use any green vegetables that you like, or whatever you have left in the fridge! I personally do not eat green pepper, as I have trouble digesting it, but you can use green or even hot pepper if you are a fan. So, this is a basic idea, which you can alter depending on your inspiration. Elena used almonds, and that is how I make this dish as well, because they are full of protein and calcium. If you don’t like almonds though, you can use your favorite nuts.

Stir fry your greens and almonds with the 2 tbsp of oil for about 3-4 mins. Pour the lemon juice, stir well and set aside. |

Stir fry the rice in another pot with the other 2 tbsp of oil for about 1-2 mins, until you see it turning slightly whiter. |

Add water (1.5 times cups of the rice, measure it in a cup so you know exactly how much water you need) and let it boil for 15 mins over medium heat. Try the rice and see if you like it, if you want it softer let it boil for 3-5 mins more. |

Once the rice is ready, add the veggies and almonds in the same pot and stir to incorporate. |
Extra Tips
If your rice ends up with more moisture use a towel to cover the pot and place the lid on top for about 10 mins, to absorb it.
