2 quinces, sliced (in 8ths)

3 tbsp odourless coconut oil, melted

6-7 tbsp coconut sugar

a little bit of cinnamon

5-6 cloves

FOR THE WHIPPED CREAM

1 can of coconut creamnot milk

45gr powdered cane sugar

pinch of vanilla bean powder
It’s quince season, so let’s enjoy it!
Here you will find a classic greek traditional sweet which my grandmother used to make every year, especially during holiday season: baked quince in caramel sauce, served with vegan whipped cream! My grandmother used to make it with “traditional” sugar (haha) and traditional animal whipped cream, but here I have changed all that, and although the taste is divine, it’s all sugar free and vegan!
For those of you who eat dairy, yogurt is another great alternative as its sour taste goes great with the sweet quince.

Use a brush to cover them with the coconut oil. |

Bake them in a preheated oven at 200 degrees celsius covered with aluminum foil, till you see them turn brown, that will take about 30 mins. Then remove the aluminum foil and bake them for another 15 minutes. When you take the tray out of the oven, tilt it left and right till you see the oil and sugar come together into a caramel sauce which you will drizzle over the quinces when you serve them. |

Beat the coconut cream with the powdered cane sugar and the vanilla, for about 2 minutes. Use a chilled bowl if you can, it will help keep the cream from turning liquid, or place it in the fridge for about 15 mins once you it's ready. Serve your quinces with some whipped cream on the side! |
