260gr whole dinkel flour

2 tsp baking powder

1 tsp aluminum free baking soda

1 pinch ground nutmeg

1 pinch sea salt

1/3 tsp cinnamon

1/3 tsp vanilla bean powder

2 ripe bananas of medium size

100-150gr honeyI put 120, try with 100 the first time and adjust to taste the next, depending on how sweet you want it

65gr coconut milknot canned, or other plant milk of your choice, oat works as good for me

1 tsp apple cider vinegar

60gr cocont oilraw or refined, whichever you prefer

1/2 cup chopped walnuts

1/4 cup dried cranberries

1-2 tbsp coconut sugar
I wanted to try the so called Banana Bread, which is so popular abroad, but not well known here in Greece. I tried several recipes, which did not work as well as I wanted though, so I decided to create my own, no fail, soft and tasty, vegan banana bread. I love walnuts and cranberries, which I think go well with it, so I added them to my loaf and here is a Vegan Banana Bread, to serve with your coffee or dip in your milk, as the little ones prefer to do, and enjoy!
Of course, you can substitute the walnuts and cranberries with your favorite nuts and dried fruits, the blueberry version is also invredible!

Mix the first 7 ingredients in a bowl. |

Put the bananas in your food processor and blend well. |

Add the rest of the liquid ingredients and blend again. |

Add the dry ingredients gradually while blending till you get an even dough. |

Pour the dough in a mixing bowl, add the walnuts and cranberries and mix with a spatula or spoon. Keep some aside for the top of your loaf. |

Sprinkle the coconut sugar on top, it will turn into a hard crust like icing, just perfect! |

Bake in a preheated oven at 180 degrees for 40-50 mins (depending on the oven as always). Check with a toothpick, and it's ready when it comes out clean. Let it cool before you take it out of the tin. |
