Ingredients

Quince is a winter fruit, which due to its sublte taste can be cooked either savoury or sweet. My grandmother used to cook it with pork for New Year’s Day, it was a family tradition. As, I do not eat meat anymore, I go for its sweet version. Although, it would be great with vegetables too I guess.

Here, it’s combined with apple, which makes its taste a bit sweeter and is baked with coconut sugar and oil to caramelize it! Its light, tasty and very fine taste is great after any meal. You can serve it in aluminum foil, or use a 2in1 product like the one #Sanitas has and I use, to bake it in paper and serve it shiny!!!

It’s a great idea for parties, for individual portions and also for any meal you may host at home with friends and family.

Ingredients

1 big quince
1 big or 2 small apples
40-50gr coconut sugar
70-80 melted coconut oil better odourless for this recipe
some cinnamon
8 cloves

Cut the quince and apple into small pieces and devide them in 8 portions.

Cut 8 almost square pieces of the parchment paper/aluminum foil 2in1, or just aluminum foil if you don't have any.

Put the quince pieces and dust them with some coconut sugar, and repeat the same with the apples on top of the quince.

Next, fold the sides of the paper/foil around the fruit, and drizzle 1 tbsp coconut oil, some cinnamon and put 1 clove in the middle. Wrap the top part and make it like a pouch. Repeat with the other 7 portions and put them all in a glass tray.

Bake in a preheated oven at 200 degrees celsius, for 30 mins. Serve with a ribbon, tied into a bow in individual plates!
