Ingredients

In greek “kapama” refers to the way something is cooked, meaning it’s cooked in tomato sauce and herbs. People usually cook pork, beef or chicken that way, but here we are going to cook a vegan version of “kapama” with cauliflower.

You can serve it as a starter, eat it as a main meal when you want something light and full of fiber, or even eat it instead of your usual salad for a change!

The unique combination of tomato and lemon, together with cinnamon gives this dish a rather… unconventional, interesting taste!

Ingredients

2 kg cauliflower florets
1 small jar of homemade tomato sauce or a can chopped tomatoes
1 cinnamon stick
juice from 1 lemon depending on your preference (if you use homemade sauce you may not need to add it at all)
salt, pepper
olive oil for serving

Steps

Put the florets in your pot, without any water.

Add the rest of the ingredients, besides the lemon juice and the oil and mix well (if you use oil in cooking, you can add half a tea cup at this stage).

Simmer and let them boil (medium heat) for about 15 mins.

Toward the end, taste and see if you need to add any lemon juice, adjust to taste.

Serve with 1 tbsp of olive oil drizzled over every dish!
