I am so proud of this particular recipe! Not just because it tastes great, but more because it is as healthy as it can get! When I was looking for a chocolate cake recipe to add to my recipe book, I couldn’t find ONE single recipe to fit my standards. Others would have sugar not eggs, others would have eggs and not sugar, others would have no eggs no sugar but margarine e.t.c. So, I decided to come up with MY OWN chocolate cake recipe.

Simple, quick, easy and vegan and SOOOOOOO TASTY!!! When the men of the house tried it, they ate the whole thing that very afternoon! They ABSOLUTELY LOVED it! Thus, I ended up baking 3-4 cakes a week that winter… Therefore, it holds the title of the favorite cake of our family!

This cake is sugarfree, has no eggs or dairy, is rich in fibre, contains healthy fats that enhance your metabolism and tastes just PERFECT! You can eat it plain or combine it with the icing I include in this recipe.

You can also use this recipe to make delicious muffins which you can top with several icings depending on the season and your appetite! You can even use it to make delicious birthday cakes!

Ingredients

FOR THE CAKE
260gr wholemeal spelt flour
50gr dark cocoa powder
2 tsp baking powder
1 tsp baking soda
1/4 tsp sea salt
1/3 tsp vanilla bean powder
300gr pitted dates soaked overnight or in hot water for 30 mins
1 cup warm filtered water
1 tsp apple cider vinegar
80gr melted coconut oil if you use the raw coconut oil your cake will have a subtle taste of coconut
FOR THE ICING
100gr melted coconut oil raw or odourless
180gr agave syrup
50gr dark cocoa powder
1 tsp orange zest
1/3 tsp vanilla bean powder

FOR THE CAKE

Preheat your oven at 180℃.

Combine all dry ingredients in a bowl.

Use your food processor and start by blending the dates and water (bit by bit) until you get an even date paste.

Continue by adding all the rest of the wet ingredients to the date paste.

Add all the dry ingredients at the end and blend well. If your mixture is too thick you may add some water.

Bake at 180℃ for 30-40 mins for one whole cake, or 20 mins or so for small individual portions (muffins). To try and make sure it's ready, dip a knife into your cake, if it comes out clean it's ok, if not bake it for another 5 mins and check again. The baking time may vary depending on the oven.

FOR THE ICING

Start by mixing the coconut oil with the cacao powder, the vanilla powder and the orange zest. Just whisk them in a bowl.

Add the agave syrup last and combine well.



Extra Tips

  • Adjust the sweetness according to your liking, either for the cake or the icing.
  • If you do not soak the dates prior to blending them, you may break your device.

Μπορούμε να αντικαταστήσουμε ένα μέρος του coconut oil (80 gr) με applesauce στο Chololate cake?

Η applesauce δεν είναι λιπαρή ύλη, άρα δεν είναι καλό υποκατάστατο για το λάδι καρύδας. Μπορεί να γίνει αντικατάσταση αλλά το αποτέλεσμα θα είναι ένα πιο γλυκό και πιο breadlike cake, πιο στεγνό δηλαδή κέικ. Δοκιμάστε το και πείτε μου πώς άλλαξε, να έχουμε και μία άλλη εναλλακτική πρόταση! Καλή επιτυχία
