200gr zea flour

65gr coconut sugar

1/2 tsp baking powder

1/3 tsp aluminum free baking soda

2 tsp cinnamon

1 tsp ginger powder

60gr freshly squeezed orange juice
Cinnamon biscuits are my favorite kind! Thin and crispy preferably, like the ones I used to buy from a store back in the day, when I still ate sugar. Now, as I can no longer enjoy those biscuits, I had to come up with my own Goji Mary recipe, to fit my requirements: no refined sugar, no margarine, no white flour but full of taste…
After a long list of recipes that I tried, I ended up improvising again and realized that the simplest things are eventually the best. Substituted white flour with zea flour (different kind of flour, with more protein and traces of gluten, no relation to wheat), used coconut sugar instead of refined sugar and extra virgin olive oil, which here in Greece where I live, is easy to find of good quality. If you cannot find good quality olive oil, or you don’t want to use it, you can try coconut oil too.

Put all dry ingredients in a bowl and mix well. |

Add the orange juice and olive oil and mix well using an spoon or a hand mixer. You may need to knead the dough with your hands a little to make sure it's even. |

Spread your dough about 3 ml high and put a piece of parchment paper between the dough and your rolling pin to spread it easier. As the zea flour hardly contains any gluten, is susceptible to braking apart, so it's harder to spread. The parchment paper will do the trick! |

Bake in a preheated oven at 180 degrees celsius for about 20-25 mins, depending on your oven and the height of your cookies. Cool them on a rack. They will harden a bit more as they cool. |
