Tahini is one of our family’s favorites. On bread, in smoothies, in cookies, we keep on finding ways to eat it as much as possible! So, mommy tries to find more recipes to make it an everyday food.
This recipe is a similar to a greek traditional pie, Tahinopita (pita means pie in Greek), which is usually eaten more during fasting before Easter. Bakeries all over Greece, make their own versions, but all of them use sugar (of course!) and margarine or butter. In my recipe, you will see that we can make delicious tahini rolls with dinkel flour, coconut sugar instead of white sugar and coconut oil instead of margarine or butter. You can also make them with olive oil, but the taste will be slightly different. You can add more sugar if you want them sweeter.
These make a great company for your afternoon coffee or tea and also a great snack for your kids to take to school.

Pour the oil and juice and knead into a ball. |

FOR THE FILLINGMix the coconut sugar with the cinnamon in a bolw. Add the tahini and mix well. |

Spread the tahini mixture on your dought, reaching the ends. |

Use a pizza rolling knife to cut into rectangular shapes, as shown in the picture. I usually cut into 10 rows and 4 columns but see how it fits you best. Try to make cut out pieces of about 2-2.5 cm wide and 10-11 cm long. |

Bake in a preheated oven at 180 degrees celsius for 20-25 mins, depending on how crispy you want them. |
