200gr shredded coconut

1/5 tsp vanilla bean powder

110gr melted coconut oilraw or odourless, whichever you prefer

135gr agave syrup

50-55 roasted almonds

100gr vegan white chocolateor normal white chocolate of your liking, if you don't want them vegan

1-2 handfulls chopped dried goji berries
I loooooove sweets in general, but there are some tastes that really fascinate me! One of these is the well know Rafaellos! After trying different ingredients and recipes that I found on the web, I ended up with my own version of these incredible truffles. One more Recipe Makeover triumph!!!
Needless to say, our rafaellos do not contain any traces of refined sugar or dairy, but if you do eat dairy you may as well make it with the normal white chocolate you may fancy. So, today we are making vegan coconut truffles with white chocolate coating! And because I had to put my signature on this one as well, and since I am know as Goji Mary… I used Goji Berries to coat them furher! You will not believe the incredible taste and combination all these ingredients make! If you don’t like goji berries, you may leave them just coated with white chocolate or even use some more shredded coconut on top, you will see the picture in the steps.
Goji Berries are well know as on of the most nutrient dense Super Foods. They contain thousands of antioxidants and also help you… burn fat!!! An antioxidant metabolism booster!!! What more can you ask from your truffles???

Whisk the shredded coconut, vanilla, agave syrup and 80gr of your oil in a bowl. |

Take some parchment paper and place it in your shallow freezer drawer (the one on top for the ice cubes) or in a tray and use gloves to make your truffles as shown in the video (the dough is quite sticky, so the gloves will make it easier for you). Take about 1 tbsp of dough and place one almond in the middle. Squeeze to cover the almond and form your truffle. Place your truffles in the freezer for about 30 mins. |

A while before taking your truffles out of the freezer, melt the chocolate together with the remaining 30gr of coconut oil. |
