My kids (and I!) looooove bake rolls. Since all the ones we find in the stores contain sugar, preservatives, taste and color enhancers and so on and so forth, we do not buy them any more. I have taught them that since we do not eat sugar (at least!), they should read all the labels of the products they are about to buy and check before they eat anything that comes their way! So, they themselves saw that sugar is in their beloved bake rolls and they should refrain from them.
Since they share the same house with Goji Mary (!) they came up with a request: “Mommy, make us sugarfree healthy bake rolls!”. And so I had to come up with a way to bake the bread, but so that it would resemble the bake rolls they know… I used a baguette, and made holes in the slices of the bread, covered them in extra virgin olive oil and herbs and they absolutely… LOVED THEM!
I chubritsa (a bulgarian herb which tastes a lot like oregano but also has its unique taste, we all love it at home), paprika, thyme, onion, garlic, turmeric or a combination of these. You can also sprinkle some nutritional yeast on them and give them a subtle cheese like taste, or for the ones who eat dairy, you can use shredded cheese on top.
You can preserve them in an airtight food container for as much as you like, except if you have used cheese, then you should eat them sooner!

If you want to make holes, like I do, to make the bake rolls look more like the store bought ones, use a metal bottle bung, like the one you see in the picture or any other kitchen ware that may do the same trick! Just press on your slice and turn right and left to cut out the center. DO NOT THROW AWAY what comes out, those will make perfect croutons! If you don't want to make holes, or don't have a way to do it, just move on to the next step. |

Bake in a preheated oven for 12-15 mins, depending on the oven, until they are completely dry and crispy. Check your trays, because depending on their place in the oven they may not be evenly baked. I switch the trays (top/bottom) when I have more than one in the oven, halfway. Preserve them in airtight containers for longer. |
