I generally love avocado! It’s so delicious in salads on its own, but can also be a versatile ingredient in savoury or sweet creams like Guacamole or Profiterole!

I usually keep a bowl of avocado spread in the fridge made with lemon and salt, which we usually dip crackers or rusks in. Here, I tried to combine it with marinated mushrooms and the result is a unique, intense flavor that everyone will love. You can eat it as a snack or even make it in smaller portions for a party treat.

Combine it with your favorite wine, and indulge yourselves!

Ingredients

FOR THE MUSHROOMS
2 tbsp odourless coconut oil
4 portobello mushrooms in small slices
2 small or 1 medium onion chopped
1/3 tsp garlich powder
3-4 tbsp chopped parsley
1 tbsp sweet paprika
3 tbsp sugarfree soy sauce
1 tsp spice mix for meat dishes
1 tsp turmeric
freshly ground pepper
salt - maybe not, because the soy sauce is already salty enough, better try first and then add to taste
FOR THE AVOCADO SPREAD
1 big avocado
juice from 1 lemon or a bit more according to your liking
1/2 tsp sea salt
FOR THE BREAD
8 slices of your favorite kind FOR THE BREAD

FOR THE MUSHROOMS

Put all the ingredients for the mushrooms (except the oil) in a bowl and let them marinade for at least 1 hour. If you can, leave them overnight in the fridge.

Put the oil in a frying pan and melt it, add the mushrooms and stir fry until most of the liquid evaporates.

FOR THE AVOCADO SPREAD

In the meanwhile, prepare your avocado spread by mixing all ingredients in your food processor.

Serve by spreading some of the avocado spread on your bread and then some mushrooms. If you like dill, you can add some on top, freshly chopped.
