This is one of my favorite sweets, a five star experience! When I first saw this recipe, I thought it was interesting, when I tried it I fell in love with it! With tahini, dates and coconut butter, filled with all “the good stuff” this recipe goes into the list with the very nutritious sweets that are good for you and also help you boost your metabolic rate.

It’s preserved in the freezer, so you can make many and enjoy them anytime! It’s also convenient when you have a party or a dinner planned and you want to make some of the treats a few days earlier, to save you time and energy on the day.

The only thing I did not like, is that it contains instant coffee, which I don’t drink and do not give my kids of course. So I tried to make it with barley drink, well known to substitute coffee and it came out brilliant! So, pick your favorite barley drink and use that instead of coffee. That way, your kids can enjoy these too.

After adjusting the ingredients and getting them to fit my liking, I present you with these incredible tahini cups with date coffee filling. Indulge yourselves!

150gr odourless coconut butter
150gr whole tahini
230gr pitted dates soaked overnight or in hot water for about 30 mins
1 1/3 tsp instant barley drink
some cacao nibs for garnish - optional

Melt the coconut butter together with tahini, to get a liquid "sauce".

Use silicon muffin cups (22 pieces), to help you take the sweets out easier, or if you don't have any use some parchment paper as shown in the picture at the bottom of your normal muffin tray to help you take them out easier once they are ready. Pour about 1/2 tbsp of the tahini sauce in the cups, you can see in the picture about 1-2 millimeters high.

Put them in the freezer for about 10 mins to let the base set.

In the meanwhile, prepare your "coffee". Use about 1/3 cup of warm water, you can also use the water in which the dates soak, and your instant barley drink, mix with a spoon.

Blend the dates with the barley drink until you get a smooth paste. You may need to scrape the sides with a spatula a few times until you do. If your paste is very thick, pour some extra water to thin it.

Take the muffins cups out of the freezer. Put about 1 tsp of your date paste on tha base you created in each of them.

Pour about another 1/2 tbsp of the tahini sauce over the date paste, make sure they it's evenly used.

Top them with some cacao nibs if you like, their taste goes great with them. Put them in the freezer again, for about 1 hour so the date paste will have time to set also. Enjoy!
