A cake is always good to have at home, for an unexpected visitor or your afternoon cravings! The usual cakes contain eggs, dairy, butter or margarine, sugar… all together or at least one! So after our Ultimate Chocolate Cake, which everybody loved, let’s try and make a more fruity flavor.

This cake does not contain any of the above ingredients, is vegan and made… the Goji Mary way! We use extra virgin olive oil (if you don’t like olive oil in your sweets you can substitute it with coconut oil), orange zest and freshly squeezed orange juice. It’s nutritious, tasty, healthy and soft, just perfect!

It’s a great snack for kids to take to school or for us at work!

260gr wholemeal dinkel flour
2 tsp baking powder
1 tsp aluminum free baking soda
1/3 tsp vanilla bean powder
1/2 tsp cinnamon powder
1/2 tsp ginger powder
3 tsp orange zest
80gr olive oil or coconut oil melted
190gr honey or agave syrup
130-140gr freshly squeezed orange juice you can also use sugar free canned juice



Mix all dry ingredients in a bowl. You can also use a food processor.


Add the honey, juice and oil and mix well using a spoon, spatula or your food processor, until all ingredients are well combined.


Pour the mixture in your baking tin and bake in a preheated oven at 180 degrees celsius for 40-50 mins. Check by dipping a toothpick in your cake to see if it's ready (if it comes out dry it is).
