100ml water

150ml orange juice

1 small ripe persimmonrelatively soft so it can be turned into cream in your blender

40gr agave syrup

4gr agar agar powder (1 full tsp)

pinch of vanilla bean powder
Jelly was never my favorite sweet, but it is a nice way to finish a meal and leave your guests feeling refreshed! Here, we use winter fruits, orange and persimmon and instead of sugar we use agave syrup, which makes our sweet ideal for diabetics or people who watch their weight.
Oranges are well know for their vitamin C richness, and the fact that they contribute to a stronger immune system whereas persimmon, besides its nutritional value, also adds a richness and color to our jelly! Thus, we can avoid the food colors, which I never use.
Last but not least, this jelly is vegan! It does not contain gelatin, but agar agar, a sea weed substance used to achive exactly the same result. No chemicals, no animal products, this jelly is a nutritious bomb!
You can serve it in the orange cups, after you juice the oranges and remove the fibre, use silicone moulds or small glasses to impress your guests! You will see pictures of how I serve it in each case.

Puree the persimmon and add it to the orange juice together with the vanilla powder and the agave syrup. Stir well. |

In a pot put the water and agar agar and bring to a boil, set aside. |

After a couple of minutes, add the orange mix into the water/agar agar mix and stir well for another couple of minutes. Pour the mix into the serving bowls of your choice, may that be the orange cups, a silicone mould or the glasses and place in the fridge for 20-30 mins. Serve with the decoration of your choice! |
