5 big potatoesif you can find them, get Cyprus potatoes as they usually have softer skin

6 tbsp olive oil

3 tsp mustard with seeds

juice from 1-2 lemons

15-20 pickles cut in slices

1 small onion in thin slices

2 tbsp fresh cut chives

2-3 tbsp fresh cut parsley

2 spring onions in slices

This one’s a classic favorite salad, which can also substitute your main meal.
Clean your potatoes thoroughly and prefer to eat them in their skin, because it is also very nutritious. Furthermore, it helps the potatoes keep more of their good properties as they are cooked. Add some pickled foods, I prefer cucumbers, but carrot will also add a twist! Pickled foods help us digest our food better and contain probiotics that aid overall digestive health.
Also prefer to use mustard with seeds, as they are also very nutritious and make your mustard much more interesting as well!
Use your favorite spices and don’t hesitate to experiment with different sauces, even hot ones like chilli.

Wash and clean your potatoes very well. |

Cut them in small cubes and boil them. |

Put the potatoes in a big bowl together with the onions, spices and pickles. |

Blend the olive oil, mustard and lemon juice in a shaker until they turn into a thick paste/sauce. |

Pour the sauce over your potatoes and mix well.Serve with some more freshly cut chives and parsley. |
