Of course they are not creamed…! Or better yet not dairy creamed. If you try this recipe you will realize there is no reason for you to use dairy cream in anything anymore. This creamy sauce has a velvety texture, is rich in taste and you will just love it. Here I cook it with rice, but it goes perfectly with pasta too.

Did you know there are 38.000 varieties of mushrooms in the world? Neither did I, hahaha! Mushrooms are very nutrient dense foods. They are rich in protein and low in saturated fat and sodium and they do not contain any cholesterol. Due to their content in all of the essential amino acids, they are considered a high quality protein source. They are also a good source of fiber, iron, zinc, manganese, phosphorus, potassium, copper and selenium.

Ingredients

FOR THE RICE
20gr melted odourless coconut oil
1 cup basmati rice
1 tsp vegetable powder
1 tsp sea salt
2-3 bay leaves
1-2 tsp paprika depending on how red you want your rice!
FOR THE CREAMED MUSHROOM SAUCE
1 onion, chopped
500gr mushrooms in slices portobello or champignions
1 tsp vegetable powder
250gr soy cooking cream
salt, pepper
spice mix for poultry if you have, or your own favorite seasoning

Melt your coconut oil in a pan and mix it with the rice. Simmer for 2-3 minutes until you see the rice turn white. Don't overdo it because it will burn.

Add 2 cups of water, the spices and the salt and let it boil for 10-15 mins.

Meanwhile, put the onion in a pan or a shallow pot and add some water to slightly "boil" it for 1-2 mins.

When the water is evaporated, add the mushrooms and simmer for about 3-4 mins until most of the water they will release is gone.

Add the spices and soy cream and mix well. Simmer and let the sauce boil in how heat for about 5-10 mins, until it is thick enough for your taste.

Serve your "red" rice with the creamed mushrooms on top, or pour the sauce in your rice pot and mix them together.
