Ingredients

1 cup soaked cashewssoak them overnight or in hot water for 1 hour or more

1 1/2 tbps nutritional yeast powderuse a bit more if you have flakes

1 tbps olive oilcold pressed, especially if you want your cheese to be raw

4 tbsp lemon juice

1/3 tsp thyme

1/3 tsp oregano

1/5 tsp garlic or onion powder

1 tsp sea salt

freshly ground pepper to your liking
I like cheese very much.. As I try to avoid dairy, I am on the hunt to find ways to eat cheesy favors anyway and anytime! I came across a recipe of cashew cream, but it was quite dull, no particular taste or intensity. So I tried to spice it up and adjust it to my liking.
So, to make it more interesting, I used garlic or onion powder (both are great, choose your favorite or make them both!). You can also make it hot, if you use chilli powder instead. Depending on your taste, and the spices you use, this basic recipe can change as you wish! Keep the basics, and experiment with the spices you like. This particular version though, satisfied kids and adults the same!
Serve it with vegetable sticks, such as carrots, cucumbers, courgettes or bread and healthy bake rolls! Spread it on your favorite slice of bread, drizzle some olive oil and enjoy, as a starter or even a healthy protein rich snack between your meals.

First blend the cashews until they are chopped in small pieces. |

Add the lemon juice and the nutritional yeast and blend again until you get a thick paste. If it's too thick, add very little water and blend again. You may need to scrape the sides once or twice till you have everything blended together. |

Add the spices and salt and blend one last time. |
