Ingredients

2 cups yellow split peas

1 carrot cut in thin round slices

1/4 of a big radish or 1-2 small ones, cut in slices

1 onion thinly sliced

1/2 leek in slices

1 orange beetrootor a red one, but the soup will turn slightly orange!

4-5 broccoli stems

2 tsp sea salt

2 tsp vegetable stock powder

2 tsp sweet paprikaand a bit hot if you like it spicier!

3 bay leaves

1-2 tsp estragon

juice of 2 limesor lemons

olive oil for serving

A very tasty split pea soup, with estragon… a great spice, know as the spice of people who know how to eat well! Just remember to add it to your meal at the end, because if you cook it it will loose its aroma and taste. It is very special, some people love and other hate it, but it sure is interesting. It goes well with lemon, but don’t try to combine it with other strong spices, as it will not work well.
Useful tip: It is an insect repellent, so you can use it in the summer to send mosquitoes, flies and other annoying insects away without destroying the enviroment with damaging chemicals.

Start by first putting the onio, leek, carrot and beetroot in the pot with a little bit of water and simmer for 3-4 minutes. |

Cut the broccoli florets and set them aside, cut their stems in small slices and add them to the pot. Simmer for another 3-4 minutes. |

Add the split peas and all the spices BESIDES estragon, the salt and water to cover all the ingredients. Let everything simmer for 15-20 minutes. |

As soon as you see that the split peas have softened, remove the stove from the fire. |

Wait for a couple of minutes for it to stop boiling and add the broccoli florets and the estragon. |

Serve with a drizzle of olive oil, freshly ground pepper and lime/lemon juice if you please! |
