1 tbsp stevia 1:4or 4 more tbsp coconut sugar

10 soaked pitted dates

juice from 1 orange

40gr melted coconut oil

30gr almond butter

1 tbsp apple cider vinegar

1 ripe banana

1 diced apple

1/3 cup water
About 2 months ago, I hosted a cooking workshop in Athens, as a guest of a local Nutrition Club. A very friendly and beatiful place with kind people where you feel right at home! They host seminars about good nutrition and help people with their weightloss goals so they very well know and appreciate the value of good nutriotion for the health of the whole family.
We had exceptional guest, one of which was Tina! I sweet mommy of two, who is on the hunt for good recipes to try and help her family change their eating habits. She was so discreet, gentle and subtle, but really enjoyed the seminar as far as she said!
I always encourage you to try your own recipes, and create your own goodies! Just like I do in my own Recipe Makeover. So this time, Tina “made-over” one of my recipes! Based on the Banana Bread, she experimented a little and came up with her own version of an Apple Cake, absolutely delicious, moist and extremely healthy as always!
She let me share it with you, so here I present you Tina’s Apple Cake! Congrats Tina, you are incredible!
Ingredients
220gr wholemeal dinkel flour | |

2 tsp baking powder | |
1 tsp baking soda | |
1 pinch sea salt | |
2 1/2 tbsp coconut sugar | |
1/3 tsp vanilla bean powder | |
1/2 tsp cinnamon | |
1 tbsp stevia 1:4 | |

Mix all dry ingredients in a bowl (besides the 1/2 tbsp coconut sugar) |

Use your food processor to blend the dates, the banana and the rest of the wet igredients. |

Add the dry mixture to the wet one and pulse till everything is incorporated. |

Put the diced apple in a bowl and mix it together with the 1/2 tbsp of coconut sugar. Add the cake dough to the apples and mix well using a spatula. |

Pour the mixture in your mould and bake in preheated oven at 170 degrees for 70-75 mins or at 180 degrees for 60 mins, or till the cake is ready (check using a toothpick or a knife if it comes out dry). |
