A carrot cake is always a good disguise for the kids…! They think they are just eating a sweet cake but they are also eating salad! In this recipe, I tried to make a vegan, dairy and egg free carrot cake and it worked!
It is so soft and has a great aroma, it also makes a delicious cake with the peanut butter orange icing. You can add nuts or dried fruits like walnuts, raisins or dehydrated mango or apricot, which go great with it.

Mix all the dry ingredients in a bowl, besides the carrot, the nuts and the fruits. |

Pour the orange juice and the olive oil and beat with a mixer or a whisker. |

Add the carrot, dry fruits and nuts (if you want any) and mix using a spoon or a spatula. |

Cover your cake pan with parchment paper, as this cake will be slightly more wet than others (because of the carrot) and it is more likely to stick to it. |

Pour the batter into the cake pan and bake in a preheated oven at 180 degrees Celsius for 40-50 mins, depending on your oven. Dip a toothpick to check if it is ready, if it comes out clean it's done. |

As soon as you remove it from the oven, take it out of the pan and take off the parchment paper. Leave it on a rack to cool completely before cutting it. |

Sprinkle some icing cane sugar on top if you like. |
