I think I just created the perfect recipe for a keto bread that is also… VEGAN!
My inspiration came from my friend Lefki, who is trying to get on the ketogenic diet and doesn’t like eggs in her cakes, breads etc. So, we have been trying several recipes for a while now, but none of them was actually bread!
So, this morning I woke up with several thoughts on how I could combine ingredients in such way to get a fluffy, tasty, simple and decent keto bread without any eggs and… got straight to the kitchen, hahaha!
I made a mix, I kneaded my buns, put them in the oven, crossed them (as we say in Greece, when we wish for something to go well, we make the cross sign to wish it well) and started… praying! I also sent a message to Lefki to wait for an update!
They came out perfect! Both Lefki and me were thrilled! It’s a good choice for everybody, children and parents, whether they are on a vegetarian, vegan, keto or just a low-carb diet.
Of course it’s a bit moist on the inside, but all such breads (without flour I mean) are. Just make sure to find the right baking time for your oven and adjust it to your liking.

Mix all dry ingredients except linseed in a bowl. |

Put the linseed in a bowl with the 6 tbsp of water and leave it aside for 10 mins. |

Preheat your oven at 200 degrees Celsius. |

As soon as your linseed is ready, add it to the dry ingreadients together with the water and the apple cider vinegar. Knead your dough and separate it in 6 portions. Make them round and place them on your baking tray on parchment paper preferably. If you want you can sprinkle some sesame seeds over the buns. You can also make a small loaf using the same recipe, but you will need to extend your baking time a little. |

Bake your buns for about 45-60 mins depending on your oven. Mine is a bit weak so I bake them for 60-70 mins. You will have to check the first time and perfect your buns the next perhaps! If my any chance they do come out too moist, just bake them some more or cut them in half and toast them a little. |
