75gr chopped walnuts (in very small pieces, but not as meal)

60gr dried apricots cut in small cubes

1/3 tsp vanilla bean powder

1/2 tsp orange zestprefer organic oranges to get the zest

100gr almond butter

120gr honey of your choiceor agave syrup
Oat bran cookies are my favorite! I love their texture but I also like them because you can make a batch and store them in an airtight container for a long time, since they are vegan and do not contain any dairy or eggs.
In this recipe I used dried apricot, since my older son likes it very much. They also turn out great if you use dried mango, which is my little one’s favorite! As you can guess, they have their own sweet requests and mommy needs to deliver! You can use your favorite dried fruit, since they all go great with walnuts.
We also use almond butter, instead of animal butter, which besides vegan is also very rich in protein and will also help our cookies rise a bit.

Steps

Place all dry ingredients in a bowl and mix them well. |

Add the almond butter and honey and mix with a spoon, you may need to knead the mix a little with your hands to get an even dough. |

Place parchment paper on your baking tray and use about 1/2 tbsp of dough to form a cookie in any shape you like, I make them round. |

Bake in a preheated oven at 170 degrees celsius for about 20-25 mins (depending on your oven). Cool them on a rack. Note that they will harden a little bit more as they cool. |
